Smashed Peas & Feta On Toast

This is a simple construction job, other than boiling a few frozen peas & toasting some bread. If you are lucky enough to have a small blender in your van you could whiz the peas up with a dash of the cooking water, but smashing them on a chopping board with a fork is just as quick. If you have a small grater, zest the lemon before using the juice.

Ingredients list

2 Cups (300g) Frozen peas

1 garlic clove, peeled

4 slices sourdough bread

1 lemon

1 ¾ oz (50g) Feta cheese

Dried chili flakes, a pinch 

Salt & pepper

Method 

Cook the frozen peas with the peeled garlic clove in boiling water until soft, about 5-7 minutes. 

Toast the bread whilst waiting for the peas. 

Drain the peas & discard the garlic. Smash the peas with the juice of a lemon and season with dried chilli flakes, salt & pepper. Go easy on the salt as the feta is also salty. 

Load the toast up with the peas. Sprinkle with feta cheese and lemon zest (if using).
