One Pan Sausage Broccoli Gnocchi
Pre cooked, shelf stable and vac packed products make life on the road a little easier, especially after a long day of adventure. We often use shelf stable gnocchi to free up space in the fridge, and pre cooked sausage makes prep, cooking and the dreaded washing up feel effortless. You’ll need one large deep sided frying pan for this recipe.

250g packet of shelf stable gnocchi
2 large handfuls broccoli florets
4 pre cooked sausages, cubed (I used pork sausage flavored with fennel and red wine vinegar).
2 garlic cloves, peeled and chopped
Chili flakes, pinch
Fennel seeds, pinch
Olive Oil
Method
In a large deep sided frying pan bring enough water to cover the broccoli and gnocchi to the boil. When boiling, throw in the broccoli for 1 minute, followed by the gnocchi for a further 2 to 3 minutes (follow packet instructions for the gnocchi). Drain and set to one side.
Put the same pan over a medium heat, add a good splash of olive oil and add the chopped garlic, chili flakes and fennel seeds for 1 minute. Throw in the cubed sausage and move around until nicely coated in garlic, spices and oil. Cook until the sausage is just starting to turn brown and crispy.
Return the broccoli and gnocchi to the pan, mix everything together. Cook for a further 2 or 3 minutes until the gnocchi is starting to get crispy edges.
Serve with a good drizzle of olive oil and grating of parmesan if you have it.
