Sweet Egg Wraps

An alternative to wheat tortillas, these wraps can be stuffed with sweet or savory fillings. Add a pinch of cinnamon to the eggs for a sweet filling, or herbs, salt and pepper for a savory option. 

If you’ve ever had a blintz you know that eggs, cheese and fruit compote is a delicious combination. Using a fruit jam bypasses the need to make a compote and adds sweetness to the cheese. 

The wraps are quick to make and keep you fueled for a long day on the hiking trails. You’ll need a large non-stick frying pan, I use a 28cm pan for this.

1 serving for a hungry hiker

Ingredients list

For the wrap:

2 eggs

2 Tablespoons quick oats

Cinnamon, ½ - 1 teaspoon 

Olive oil spray 

For the filling: 

Cottage cheese, 2 or 3 heaping Tablespoons 

Raspberry jam, 1 Tablespoon 

Fresh raspberries, small handful 

Method 

Whisk the eggs until frothy, then add the quick oats and cinnamon. 

Heat the large non-stick frying pan over a medium heat and add a spritz of olive oil. Pour in the egg and oat mixture, turn down the heat to medium/low and fry until almost set, about 2 minutes. Turn the wrap over and fry for another 30 seconds. 

Tip out onto a plate, you can either fill one side and simply fold over the top, or try folding into a cone shape and then fill with cottage cheese, jam and fresh berries. 


TIP: Try different jam and fresh berry combinations.
